Proper Pineapple
1 ounce Proper Twelve Irish Whiskey
1 ounce Rum Haven Coconut Rum
3 ounces Pineapple juice
¼ ounce Kraken rum floater
Bar spoon of brown sugar
Pineapple piece bruléed with a torch
1 pineapple leaf
Add whiskey, rum, pineapple juice and a spoonful of brown sugar to a shaker container. Add ice and shake vigorously. Strain into a tall glass over fresh ice. Float the Kraken rum on top and garnish with a pineapple wedge. Put a little brown sugar on top of the pineapple and brûlée with a torch. Garnish with a pineapple leaf.
