Hemingway’s replacement has a name

Four Flamingos with be the name of the restaurant replacing Hemingway’s at the Hyatt Regency Grand Cypress. Its subtitle is: A Richard Blais Florida Kitchen. It is slated to open in December.

The name is a nod to the four species of flamingos that are native to the Americas and, according to a press release, a tribute to the birds’ proclivity to gather and eat in groups. The Blais part reflects the participation of the television chef, pictured at top, known as the first winner of Bravo’s Top Chef All-Stars program. He was recently announced as Gordon Ramsay’s co-star for the cooking competition program Next Level Chef, so I hope he’s honing his swearing skills.

The menu, one presumes, will feature foods fond to flamingos, such as fresh-caught fish and steaks (not sure flamingos like steak but it’s on the menu anyway).

Hemingway’s closed at the beginning of the pandemic and never reopened.
