Miliotes Plans to Take Wine Bar to a New Level

Spring is officially here, so the clock is now ticking on the promise from George Miliotes that his Disney Springs project, Wine Bar George, will open before the beginning of summer.

If you’ve been to the Springs and have seen some of the construction going on behind the barrier walls, you may wonder if the time frame is realistic. That’s because this is not your typical wine bar.

I’ve seen wine bars that are no bigger than a walk-in closet with a bar fashioned out of a blank of wood placed across two barrels. As you can see from the renderings here, WBG is a little more involved than that.

At top is a newly released rendering of what the second floor bar will look like, seen here for the first time.

Also, the food offered at Wine Bar George will be a bit more involved than a few crackers and sliced cheese. Chef Ron Rupert is devising an ambitious menu that will complement Miliotes’ wine selections.

Miliotes, of course, is a member of the exclusive master sommeliers club, certified by the Court of Master Sommeliers. In a statement, Miliotes said of his project, ““Guests will experience a feel reminiscent of the ‘Old World’ as if they are on the bottom floor of a gravity-flow winery surrounded by their best friends. The upstairs floor includes seating for groups of all sizes, space for private events and sweeping views of Disney Springs.”

Can’t wait. Hopefully we’ll be able to experience it before the next harvest. Here are some more renderings.
