Prato, the new restaurant from the Luma on Park team, officially opens today after a VIP debut Monday night. Indeed, late last week the space, a former Ann Taylor retail store, was still in the throes of construction. But everything is now in place, and the cooks and servers are starting to become familiar with their new place. Prato is at 124 Park Ave. N., Winter Park. A wood-burning oven, imported from Naples, Italy, and the pizza-making station are a focal point of the dining room. The cooks use a laser-guided thermometer to monitor the temperature of different areas inside the oven. The hottest spots are kept over 800 degrees.
Brandon McGlamery, front, will serve as executive chef of both Luma and Prato. Matt Cargo, center in cap, is Prato’s chef de cuisine.
A long, walk-around bar dominates the main dining area. The decor is rustic, tavern-like and decidedly more casual than Luma.
