The I-Drive Italian restaurant will offer two entrée specials available Friday-Sunday on Mother’s Day weekend: Prosciutto Wrapped Chicken Involtini ($26) – Stuffed with Ricotta, Parmigiano, Roasted Red Peppers, Basil, Roasted Garlic Mashed Potatoes, and Roasted Romanesco; and Jumbo Red Shrimp Scampi ($24) – house-made pappardelle, lemon, butter, white wine, garlic, and parsley.
