Snow birds may insist fresh tomatoes are only a summertime treat, but ‘tis the season in sunny Florida. The divas trekked to Swank Farms in Palm Beach County, where farmer Darin Swank shared some of his tart, sweet heirloom tomatoes that we love to eat like apples.
Just in time for the Academy Awards, this less-is-more combo gives these juicy, gorgeous tomatoes a starring role, intertwined with sublime supporting actors: a few slivers or red onion, fresh basil and a crumble of blue cheese. Trust us, just like a starlet, you’ll want a hunk – of crusty bread, that is, to mop up the juices.
Tomatoes with Red Onion Vinaigrette
Serves 4
1/2 cup slivered red onion
2 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar
2 large tomatoes, sliced 1/4-inch thick
6 basil leaves, thinly sliced
2 tablespoons crumbled blue cheese
Coarse salt, freshly ground black pepper, to taste
Crusty bread, for serving
- Combine onion, olive oil, and vinegar in a medium bowl. Toss to combine; set aside.
- Stack basil leaves and slice them crosswise into thin slivers. Set aside.
- Arrange tomato slices on serving platter and drizzle with dressing. Scatter basil and blue cheese over top. Season to taste with salt and pepper. Serve with good crusty bread to mop up juices.
