Pammie’s Sammies in Winter Garden is known for its sandwiches, of course, but owner Pam Thomas has come up with a breakfast creation that’s perfect for kids who might want to serve mom breakfast in bed on Mother’s Day – French Toast Casserole.

It’s a very forgiving recipe – the measurements don’t have to be exact, in fact Thomas uses a coffee cup to measure some of the ingredients. You can assume the coffee cup is about 10 ounces.

French Toast Casserole

1 loaf French bread (you can leave it open on your dashboard to dry out all day if you want)
1 1/2 coffee cup full Cinnamon Toast Crunch, Crème Brûlée or flavor of choice Coffeemate (not the powdered kind)
3 large eggs
1/2 coffee cup full of maple syrup
1/3 Butter
3 packages of Cinnamon Oat Crunch Granola Bars

Rip the baguette into bite-size pieces, set aside to dry out

Without opening the packages, crush the granola bars using your hands or a heavy object.

Whisk together (stir real fast with a fork) 1 ½ coffee cups of Coffeemate, eggs and ½ coffee cup of maple syrup.

Stir in the bread and 2 of the granola bars and give it a good beating. Should be a wet mixture so add a little more Coffeemate if needed…bread will soak it up.

Cover and refrigerate two to three hours or overnight.

Next morning heat oven to 350 degrees. Place 1/3 stick of butter in 8” x 8” baking pan. Put pan in oven and heat until butter is just melted the swirl it around to cover bottom of pan.

Pour bread mixture into pan and spread evenly.

Bake for about 35-40 minutes…until lightly browned.

Sprinkle remaining package of granola bars over the top and serve with extra butter and maple syrup. Really good with a side of bacon or sausage.
