In this month’s issue of The Community Paper, my Local Flavor column features the recipe for Hot Crab Dip from the Tap Room at Dubsdread.

Here in Florida, there really isn’t a crab season — we can pretty much get fresh crab all year. However, right now is when the freshest catches occur, so you’re likely to find some good product at your favorite fishmonger. Or crabmonger, if you will.

We also don’t have a dip season; you’re free to eat it at any time. And that includes hot dips, like this one from the Tap Room at Dubsdread. One of the area’s most celebrated restaurants, the Tap Room is perennially on lists of “hidden gems,” even though it’s in plain sight and everyone pretty much knows about it by now.

You may take umbrage with a hot dip as we approach summer. But I’m the type who even eats chili in July, so I’m good with a hot appetizer too. Besides, the hotter the weather, the easier it is to keep this rich and gooey starter nice and warm.

So, crab season, dip season, good-eating season. It’s Florida.
