Chefwatch: K Restaurant & Wine Bar and Fiorella’s

It’s another edition of musical chefs here at the flog with some kitchen switches to report.

Kevin Fonzo has put the K back into K Restaurant & Wine Bar. He had turned daily cheffing duties over to Scott Copeland some time ago. But now Copeland has left to join the team at Antonio’s La Fiamma in Maitland. According to K manager Dan Francoforte, Copeland has desires to own his own restaurant and left to vary his experience — all amicable, sayd Francoforte.

So Fonzo has put his toque back on and is once again cooking at “his baby,” as Francoforte put it. It probably doesn’t hurt to have one less chefde cuisine salary to dole out these days. I’m just saying.

They’re saving a little money down at the Boheme at the Grand Bohemian hotel in downtown Orlando. Robert Mason, who had returned to that post in an April 2008 version of musical chefs, has left to join Westin Imagine hotel as chef de cuisine of Fiorella’s. When I reviewed Fiorella’s earlier on the flog I figured the hotel wasn’t very serious about attracting a local clientele with good food. Mason’s appointment might just prove me wrong.

As for the position at the Boheme, it remains open for now with chef duties being handled by the restaurant’s two sous chefs.
