Burnett to Beard

Joseph Burnett, executive chef at Baldwin Park’s Osprey Tavern, is scheduled to cook at the James Beard House on Tuesday, July 19. Burnett and his OT crew will present a dinner titled “Elegant Tavern Supper” at the Greenwich Village townhouse that was Beard’s home.

The dinner, which starts at 7 p.m. with passed hors d’oeuvres in the house’s atrium, is open to the public. Price to attend is $130 for those with James Beard Foundation memberships and $170 to the general public.

Here is the menu that Burnett has planned for the evening:

Hors d’Oeuvre
Octopus Terrines with Piquillo Pepper Mojo and Leek Ash
Grilled Foie Gras Torchon with Hush Puppies and Jam
Beef Tongue Pastrami on Rye Drop Biscuits

Dinner
Florida Snapper Crudo with Chamoy, Mango, Cucumbers, Watermelon, and Local Radishes
Warm Trout Terrine with Crosnes, Florida Rock Shrimp, and Smoked Tomato Consommé
Lake Meadow Naturals Guinea Hen Ballotine with Zucchini Bread, Rhubarb, and Florida Peaches
Frog Song Organics Berkshire Porchetta with Seminole Pumpkin Gnudi, Pink-Eyed Peas, and Sweet Potato Greens
Strawberry Shortcake
A selection of fine wines will be served with this dinner.

Burnett joins an ever growing list of local chefs who have cooked at the Beard House and who seek to present the Central Florida culinary scene to a wider audience.
