Crispy Pepperoni White Tortizzas with Sliced ‘Maters and Fresh Basil

Lazy gals deserve great pizza too. So what if slaving over a flour-festooned counter makes you sink even further into the couch with a pillow over your head? Don’t worry, we totally get it. And we’re here with a deliciously clever answer to your doughy dilemma.

Hiding in your pantry, ready to perform any number of culinary tricks is the ubiquitous flour tortilla – a perfectly crisp, golden pizza crust, the ultra-thin sort for us (mostly) ultra-health-conscious gals.
Let the kids choose their favorite toppings and call it Tortizza Tuesday. You can direct from the couch with a perfectly chilled glass of wine.

 

Crispy Pepperoni White Tortizzas with Sliced ‘Maters and Fresh Basil
Makes 4 Tortizzas

Olive oil, for brushing
4 (8-inch) flour tortillas
Favorite store-bought Alfredo sauce
20 thin slices of sandwich pepperoni (fresh from the deli is best)
2 cups shredded mozzarella
2 or 3 large slicing tomatoes, thinly sliced
1/2 cup freshly grated Prmesan
Whole oregano, to taste
Fresh basil leaves, to taste, torn

Preheat oven to 400°F. Heat a large skillet over medium-high heat, lightly brushing with olive oil. When pan is hot, heat 1 tortilla until crisp and golden on one side, then flip and brown the other side. If the tortilla begins to burn before it’s crisp, lower the heat. Repeat process with all tortillas.

Drizzle each tortilla with Alfredo sauce to taste (a heaping tablespoon should suffice). Layer on the pepperoni, 5 slices per pizza. Add mozzarella, tomato slices, Parmesan and oregano, rubbed between your palms to release the fragrance. Scatter pie with fresh basil.

Cook for 10 to 15 minutes on a cookie sheet until cheese is bubbling and tortilla edges are nicely browned. Serve hot.

Diva confession: Use mini-tortillas for party appetizers. Pair bacon, diced apple and bleu cheese, or brie with caramelized onions and a dollop of orange marmalade for a new take on traditional pizza toppings. Try feta or goat cheese with olive tapenade and a few roasted red peppers for sweetness, or stay classy with buffalo mozzarella, thinly sliced cherry tomatoes and lots of fresh basil.
